Bring on the BBQ this summer!

Summer is well and truly underway, so isn’t time to light up the BBQ?

The British Summer cannot be fully enjoyed without the correct BBQ equipment! At Coolings Green & Pleasant we can provide you with both charcoal and gas barbecues that can make your summer that little bit easier! However, alongside your regular barbecue menu here are a few twists on some BBQ favourites:

Jerk Halloumi Kebabs

Although your traditional BBQ is stacked full of tasty meats, why not switch up your kebabs with a slice of halloumi cheese? These are super simple to make and can be customized with your favourite veggie flavours. For the spicy Jamaican jerk marinade you will need a combination of spices including:  garlic, allspice, paprika, cayenne, black pepper, cinnamon, nutmeg and a sprinkle of brown sugar. Mix all the spices just combine with your halloumi and veggies to marinade, then you are ready to go!

BBQ Chorizo Potato Salad  

The potato salad has long been viewed as a strictly ‘B grade’ attraction of the BBQ but you can grab the attention of the party with a healthy helping of fresh chorizo. Quick tip, when cooking the chorizo on the BBQ is to cut each piece in half and then put the cut side face down on the grill. This helps to crisp up the chorizo, but ensure that it is turned regularly. The dressing can also be combined with sour cream and Dijon mustard for added flavour.

 

Korean Chilli, Sesame and Honey Chicken

Have you ever thought that plain chicken on the barbecue never quite cut it? With this recipe you can jazz up your plain chicken thighs with a Korean twist. This recipe relies on Korean Chilli paste which can be easily replicated with tomato ketchup and sirarcha chilli sauce. The glaze also requires honey, lime, soy sauce and sesame oil. For an added bit of fun they can be prepared on skewers which also helps for an even cook! Make sure to keep turning the chicken for a nice even glaze.
